Green with golden hues, fresh olive aroma on the nose with grassy hints. Pleasantly supple, soft and mouthfilling on the palate, tangy with balanced bitterness and piquancy. Slightly bitterish flavour, blending nicely with the hints of thistle and artichoke, and a pleasant piquant finish. Store upright at room temperature.
Harvest and pressing
After manual harvesting the olives were placed in perforated cases. The olives were then pressed on average two days after harvesting. We monitored this procedure at the Val Virginio olive mill at Montespertoli. The olives were brought back to the farm and the oil was stored in stainless steel vats at a controlled temperature. The oil was filtered before bottling.
