Vinification
After manual harvesting the bunches of grapes were placed in the destemmer for soft crushing. The free-run wine underwent fermentation at a controlled temperature of 16-18°C. Maceration lasted about 15 days in stainless steel vats at a controlled temperature, so that the wine could complete alcoholic fermentation. The wine was pumped over twice a day at this stage. The wine was then racked and completed malolactic fermentation by the end of December. Subsequent ageing took place in stainless steel vats at a controlled temperature. After filtering and bottling, the wine was aged in bottles for two months. Alcohol content 11.5%.
